If I had to recommend only one dish at Kaixo, it would this the squid braised in its own ink, a classic Basque dish.
This is basically squid that is stuffed with chopped tentacles sauted with onions, olive oil, and braised in a creamy black sauce made with squid ink and fish broth.
Tender, flavourful squid. And the squid ink sauce goes so well with grilled bread.
